Milk and Honey Cooking School

"Milk & Honey Cooking School" is a combination of scripture references, historical data, cultural tidbits, and a little that we know of the hospitality of the lands of the Middle East to take you on a cooking and eating adventure. The Cooking School begins with Adam's first bite of the forbidden fruit and shows how foods, seasonings, and preparation methods changed as the Hebrew people came in contact with the outside world. It focuses on the major historical periods; the Patriarchal Period (Abraham, Isaac, Jacob & Joseph), the Egyptian Period (Joseph through Moses), the time of the Babylonian Exile, the Greek period, and the New Testament Period into which Jesus was born.
Outdoor Kitchens - Grilling and Smoking Meat for a Crowd

Mahoning Valley Christian Service Camp utilizes 3 outdoor kitchens (near their Dining Hall, Pioneer Camp and Wilderness Camp) to grill and smoke as much as 16 pork butts, 200 burgers, 200 hotdogs, and 200 pork loins. Join Tony Augsburger, executive director and "main meat guy" in a discussion of how he employs his love of cooking and outdoor kitchens to feed an average of 300 people a week, with large quantities of donated pork and beef.

Dietary Restrictions - how accommodating is your food service? How accommodating do you want to be? Is it important to accommodate allergies and other dietary restrictions? Does it really make a difference? I think it does! If you can get a kid to camp, even a kid with an extreme peanut allergy or gluten sensitivity, and that kid learns about Jesus, then the accommodation is worth it. This workshop will offer practical information, tips, tricks, and advice on how to be accommodating, safe, and cost effective in food service - even for the toughest allergies.

This panel of speakers with many combined years of experience in the Christian Camp world will share anecdotal stories of how they've dealt with parents, campers, or retreat guests in interesting situations. They will also share share best practices when dealing with camper/parent complaints including pre-emptive steps to take. Finally, we will turn the discussion to ways you can turned disgruntled guests into loyal supporters
Getting Your Message Out/Online Marketing

How do we grab the attention of kids who might come to camp? And how do we make it easy for their family or church to pay for it? This session will start with a general overview of the digital tools available for camps to reach their prospective audience of campers, and the adults who will make the financial decision to pay for a week of camp. (Those are 2 totally different marketing groups!)
We'll cover the basics of good web design, and review some of the DIY web platforms available. This will lead into a discussion of what to tackle yourself, and when to hire a pro or semi-pro. We'll get specific about the roles of Web sites, Social Media, Google Business Profiles, Email & Mobile Marketing.
The session will wrap up with a look at the future of digital marketing, how it might change in the future, and the changes you might want to make proactively, as well as time for Q and A.
Pricing Case Study: Setting Competitive Rental Rates

We will walk through a case study performed by looking at a variety of camps in different regions to help provide a good pulse on where rates are currently set. This will be an interactive session (hybrid of workshop/speed networking) where people can discuss the process of how they set rates for their rental groups, who they allow to rent, policies, etc.
Creating a Service Culture: Everything I Learned from Non-camp Customer Service Jobs
